750g Soanes chicken breasts
1 large onion, chopped
2 tbsp oil or ghee
3 cloves of garlic, chopped finely
3 tbsp curry paste (to suit your taste)
2 400g tins chopped tomatoes
2 chicken stock cubes made up with 150ml water
1/2 tsp chilli flakes (if you want to make a hotter curry)
2 tsp dried coriander leaf
1. Dice chicken in 2cm cubes and roughly chop onion.
2. Heat oil or ghee in a saucepan then fry the onions until softened, then add chicken fillet and seal.
3. Add the curry paste, garlic, tomatoes, chicken stock and chilli flakes to the pan and simmer for 15 minutes,or until the sauce thickens.
4. Add coriander to taste.
5. Serve with basmati rice or naan bread.
