200g plain tortilla chips
2 cooked chicken breasts, shredded into small pieces
1 avocado, peeled and sliced
1 red chilli, deseeded and thinly sliced
140g cheddar cheese, grated coriander to garnish
Your choice of salsa, Tabasco, crème fraîche or guacamole to serve
1. Preheat oven to 200°C/180°C fan/gas 6.
2. In an ovenproof dish, skillet or baking tray, layer up the tortilla chips with the chopped chicken, avocado, cheese and chilli.
3. Bake for 8 minutes or until the cheese has melted.
4. To serve, garnish with coriander and eat with your favourite accompaniments.
